You can also get brown sugar, both light and dark, at the Asian market on Müllerstr. near the Seestr. U-Bahn station in Wedding. They also have boxes of Arm & Hammer baking soda.

Baking soda, aka Sodium Bicarbonate, is Natron (Natiumhydrogencarbonat). I found a 50g sachet in Kaisers. I used to buy it from the pharmacy in the UK, but haven't tried here.

fudduf: sweet. as many of the asia markts seem to use the same supplier, i'd guess this brand of brown sugar should be available at most outlets 'round the hauptstadt. and if your recipe isn't a super-family secret, do share!

It's what's called "soft brown sugar" or "dark soft brown sugar" in the UK. Think of the texture of damp sand. Much finer than demerera. Those cookies look amazing!

hi d.z. - nope, the sugar isn't Demerera; although i've never used it myself, i understand Demerera to have larger crystals than this type of softer, gritty, almost wet-feeling brown sugar. it's definitely the texture that makes this brown sugar so well-suited for tender cookies. can one bake with Demerera?
